Colcannon

Have you ever had colcannon? YOU SHOULD! Where has this been all of my life?! OMG. This was a game changer. And a sneaky way to eat some greens. That’s a win-win in my book! Give this Irish dish a try – you’ll be hooked!

Colcannon
(recipe adapted from Happy Herbivore Abroad)
2 cups baking potatoes, chopped
2 cups kale, chopped
nondairy milk (we used almond)
1/2 T Dijon mustard
2 green onions, sliced

In a large pot add the chopped potatoes and cover with water. Bring to a boil and cook until fork tender, about 5 minutes. Meanwhile, add chopped kale and steam for 1-2 minutes over the pot of potatoes, then drain. (or steam in another pot if you don’t have a steamer basket available) When the potatoes are done, drain and return to the pot. Mash with a potato masher adding splashes of nondairy milk as necessary to achieve the right consistency. Add about a 1/2 T of the Dijon mustard and mix together. Taste, and add more Dijon if desired. Add salt and pepper to taste, then stir in the kale and green onions and mix until well combined.
