Crazy Sexy Kale

Unless you’ve been living under a rock (have you?!), then you know that kale is THE ruler of the green, leafy vegetables. I have to say, we got a lot of kale in our CSA last summer and we weren’t always sure how to eat it We tried making kale chips (fail) and salad (eh). BUT! I have finally found my go-to kale salad recipe. I could eat this one everyday and be happy. It’s perfectly satisfying, and it will definitely keep you full. Go make this now!

Crazy Sexy Kale
(recipe adapted from Crazy Sexy Kitchen)
1 bunch kale, any variety, shredded by hand (we prefer leafy kale)
1 cup diced red bell pepper
1/4 cup chopped fresh parsley
1 1/2 avocados, pitted, removed from skin and chopped
1 T canola oil
1 1/2 T fresh lemon juice
Kosher salt, to taste

Add kale to a medium-sized bowl and massage gently for about 2 minutes. Add the remaining ingredients and mix with your hands to further “wilt” the kale and cream the avocado. Serves 2 as a meal.

That’s it! The beauty of this salad is that it is perfect as is, but you can feel free to add any additional veggies or herbs you would like.
