Pizza Soup

I like pizza. I like soup. Why not put them together? This soup puts them together in the absolute best way possible. Mmmmm! This is a perfect blend of everything. It’s great on a cold night, or any night you want something comforting and ooey-gooey delicious. Give this soup a try! You’ll love it just as much as we do!

Pizza Soup
(recipe adapted from Take This Dish and Twist It)
12 ounces semi-condensed vegan tomato soup (we use Imagine)
8 ounces water
2 cloves garlic, minced
3/4 cup ditalini pasta
3 scallions, thinly sliced
1/2 tsp Italian seasoning
1/2 tsp pizza seasoning
Crushed red pepper flakes, to taste
Vegan mozzarella cheese, shredded

Preheat broiler to high. In a medium-sized saucepan heat soup, water and garlic to a boil over medium-high heat.

Once boiling, add pasta, scallions, seasonings and boil according to pasta package directions. (7 minutes works for us)

Once pasta is done, ladle into two oven-safe bowls and sprinkle with mozzarella cheese and broil until cheese is melted and bubbly. Serve and enjoy! (and aren’t you totally jealous of my retro potholder?!)

Note: this can easily be made gluten free. Lil Sis makes this soup and makes a simple swap out of the noodles. We’ve converted her into a believer of this soup, as well!
