Red Beans and Rice with Guacamole (vegan and gluten free)

Everyone seems to think that vegans only eat raw veggies, fruit, rice and beans. While all those things are very important to a balanced diet, they certainly aren’t the only things we eat! However, sometimes you just want to go back to the basics. (And save a little money, too!) I was perusing Pinterest the other day when I came across a great recipe that I couldn’t wait to try. Mostly because I knew that Nick would love it. And any excuse to make guacamole is a winner for me! This is a quick, satisfying meal that will leave you feeling warm and contented. The flavors are subtle and delicious. Perfect for a cozy night at home.

Red Beans and Rice w/ guacamole

Red Beans and Rice with Guacamole
recipe adapted from Eat Live Run
3 cups cooked brown rice
8 ounces tomato sauce (can use more if you like it “saucy”!)
1 – 14.5 ounce can red beans
1 – 4 ounce can diced green chilies
1 1/2 tsp ground cumin
1 tsp chili powder
1 tsp kosher salt
1/4 tsp garlic powder

2 ripe avocados, pitted, and diced
1 jalapeno pepper, finely chopped
pinch of kosher salt
juice of 2 limes

Combine avocado, chopped jalapeno, salt and lime juice in a bowl. Mash coarsely with a fork and set aside.

Mix remaining ingredients (rice-garlic powder) in a large saucepan over medium-low heat, stirring often. Cook together until everything is heated through. Serve with a big dollop of guacamole.
