Valentine’s Day Cupcakes (vegan & soy free)

Who doesn’t love cupcakes? And who doesn’t love cupcakes that are covered in sprinkles and hearts? I love Valentine’s Day. Sure, it’s a great holiday for Hallmark and florists, but it’s a day to celebrate love! I’d like to think I’m pretty good at that most days, but it’s fun to have a day set aside to truly celebrate. Nick’s favorite is white cake, so I made these delicious, soft, vanilla-y cakes for him. Yum! Enjoy one…or three today!

Vegan & soy free Valentine's Day cupcakes

Valentine’s Day Cupcakes:
2 cups unsweetened almond milk
2 tsp apple cider vinegar
1 1/2 cups evaporated cane juice
2/3 cup canola oil
2 T pure vanilla extract
1 1/2 cups all-purpose flour
1/2 cup whole wheat pastry flour
3 T cornstarch
3/4 tsp baking soda
1 tsp baking powder
3/4 tsp kosher salt

Buttercream:
1 1/2 sticks earth balance soy free buttery sticks, softened to room temperature
3/4 cup non-hydrogenated shortening
3 1/2 cups powdered sugar
2 T pure vanilla extract

Cupcakes: Preheat oven to 350 degrees. Prepare a muffin/cupcake pan with liners and set aside. In a large bowl, whisk together almond milk and apple cider vinegar and let set for at least 5 minutes. Add evaporated cane juice, oil and vanilla extract and whisk together until frothy. In a separate bowl, whisk together flours, cornstarch, baking soda, baking powder and salt. Add to the wet ingredients and whisk until no more dry flour is present. Using a large cookie scoop (think ice cream scoop size) scoop batter into prepared liners. Bake for 8 minutes, rotate pan 180 degrees and bake for another 8 minutes. Let sit in pan for 2 minutes before moving to a cooling rack to cool completely.

Buttercream: Beat butter and shortening together on medium-high speed for 3 minutes, until light and creamy. Add powdered sugar and beat on medium-low until combined. Turn up mixer to medium-high and beat for 2 more minutes. Add vanilla extract and mix until well combined. Pipe or spread onto cooled cupcakes.
