Bacon Cheeseburger Pizza (vegan & easily gluten free)

Remember the Beyond Meat Crumbles I talked about a couple of weeks ago? Well, Nick & I put the “beefy” crumbles to the test and it was nothing short of awesome! We’ve been trying to think of new and interesting ways to use them, and since we love pizza so much we decided to put the two together. The finished product was delicious and amazing. (if I do say so myself)

Vegan Cheeseburger Pizza (featuring Beyond Meat & Teese cheese)

You can use your favorite pizza crust recipe (or your favorite gluten free crust!) and top with your favorite cheeseburger toppings. We went with traditional, but you could get as crazy as you’d like! Give this satisfying and tasty pizza a try! Nick even says that this pizza is cold the next morning for breakfast. (I’ll take his word for it!)

Bacon Cheeseburger Pizza
Pizza dough:
1 cup warm water
2 1/4 tsp yeast
1 T agave nectar
2 T extra virgin olive oil
1 tsp kosher salt
3 cups bread flour

Dissolve yeast in warm water with the agave. Let sit about 10 minutes, until frothy. In mixing bowl, mix together salt and bread flour until well combined. Add olive oil and yeast mixture and mix with a dough hook until everything comes together. Once everything is combined, turn to high speed and let it go for 6 minutes. Once done, it should be smooth and elastic. If you’re using a no-rise yeast, you can move on to assembling your pizza, otherwise, let it rise in a warm place until doubled in size. Makes two 9-inch pizza crusts. You can freeze one for a later use. (which is what we do!)

1/2 cup ketchup + 1/8 cup mustard, mixed together
1/2 red onion, finely diced
1/2 cup shredded cheddar vegan cheese (we like Teese cheese)
2 baby dill pickles, diced
1/2 cup grape tomatoes, quartered
Vegan bacon (we like Phoney Baloney’s)
Beyond Meat beefy crumbles (as many or as little as you’d like), sauteed in a lightly oiled pan

Vegan Cheeseburger Pizza (featuring Beyond Meat & Teese cheese)

To assemble and make the pizza:

Preheat oven to 500 degrees. Once heated, par-bake pizza crust for about 5 minutes. Break open any bubbles to release steam. Add ketchup/mustard mixture and spread evenly over the crust as you would with pizza sauce. Layer red onion, beefy crumbles, cheese, tomatoes, pickle, and top with bacon.

(note: if using a gluten free crust, follow package directions for baking)

Bake until crust is golden brown and cheese is bubbly.
