Nick and I just got back from a week away. We road tripped out to North Carolina to visit some friends and took some time on the way home to explore a bit. We ended up in Gatlinburg, TN one day. Let me say this, it’s INSANE! It’s super busy and we were even there before the summer season officially started! I’d never been, and Nick had only been as a kid, so we were both a bit overwhelmed. We were only passing through, but spent quite a few hours wandering around, tasting moonshine and doing some people watching. We were headed to Lexington, KY for the night, but before leaving town, we stopped at Mellow Mushroom for a killer pizza. YUM. We’ve only been to Mellow Mushroom one other time, as here in the Midwest we’re a bit of a vegan desert! They have a new and improved gluten free crust that is now vegan! We decided to give it a try and so we ordered the Veg Out pizza on the gluten free crust with just a touch of daiya cheese to hold everything together.
People! This pizza is amazing! Have you tried it? Do you have a Mellow Mushroom near you? If so, you should totally give the gluten free crust a go! It’s got an amazing texture with just the right amount of crunch and chew. Soooo good. I wish I knew how to make it at home!
